Ginger-Tomato Salad

Ingredients

* 2 tablespoons vinegar (LEMON Juice would do fine too)
* 1 tablespoon ginger, finely minced
* 1 tablespoon raw honey
* salt to sprinkle
* 2 cups tomatoes, sliced in very small cubes
* ¼ cup scallions or green onions, sliced finely

Preparation

Mix all ingredients in a large bowl. Chill for at least half an hour to allow flavors to mingle. Serve and enjoy.
